What’s better than a Thursday Night Out? A Thursday Night In...a house eating delicious food with your classmates! Taking advantage of our cohort’s diversity, we planned a special Thursday evening potluck, where everyone and anyone was encouraged to bring a dish or drink to share with all. The diversity of dishes sparked impromptu conversations about heritage and culture, while satisfying our hungry student stomachs.
Everyone brought a lot of food and drink including matzo ball soup, chili con carne, all types of Indian cuisine (homemade and from ), enchiladas, , shredded chicken tacos, homemade brownies, kale salad with a miso-ginger vinaigrette, and a healthy selection of wine and locally harvested, non-GMO artisan beer. Within an hour, my stomach was filled to the brim, but some true culinary champions forged on.
With the luxury of a temperate Colorado fall evening, the group happily migrated to the backyard to roast marshmallows for s’mores (some for the first time!) over a big bonfire. As the fire died down, the night ended with some card and board games and a lot of laughter. A second potluck is already in the plans for the spring semester!
